Fort Washakie Wellness Challenge - Robyn Rofkar

Wow, one more day! I really wish I could have lost more weight this spring, but oh well... I'm sure I'm much healthier anyway, getting some cardio and strength things going on.

I think I'll be so busy this summer that hopefully I'll be too busy (or tired) to eat. lol

But I know I have 3 concession stands coming up in the next 5 weeks. If I have a taco salad planned ahead of time, I think I can bypass the frybread.

We had a cookout for Memorial day and I did great eating all the veggies and meats. Then I tried my potato salad and it was SO GOOD. I forgot to make my turnip "potato" salad.

I hope everyone has a great summer and stays very healthy. Jeanine had a great motivational tool. She picked out this cute t-shirt in size S and will hang that up for motivation. I should hang up a pair of pants that I wore last year! It's depressing that I can't wear all my summer stuff from just last summer, but maybe in the fall! lol

ACK!! No breakfast and I'm starving!

Good thing it's pork chops today - I hope!

I must say I feel better overall. I can really see an improvement with the walking and exercising. I'm sure if I could just quit eating "treats", I could lose some actual weight.

I'm almost done with all my college classwork and then I'll be able to devote more time to meal planning. I need to plan out each meal and snack for two weeks, so I don't run short and end up eating something I'll be sorry for later.

Going hiking up the little hill at the park again this evening. It's beautiful out and I can't wait.

Elk fajitas are on the menu for tonight. I think I have some low carb tortillas left.

Lunch was chicken, cottage cheese, strawberries, and cornbread stuffing with gravy. I should have just thrown my stuffing away, cuz after one bite, I had to eat the whole thing.

Breakfast: 2 eggs scrambled with 1/2 green pepper and salsa. Trying to make sure I get enough veggies in.

Last night was terrible. Ate my bag of popcorn and then sat at the board meeting all night. Ate 1 piece of cheese and a little vegetable soup. My stomach was doing flip flops and growling horribly. When I got home at 10:45 I made some French toast with left over onion bread to settle it down.

Did I mention I hit the Wildflour bakery last week and got $2.00 worth of 2 day old bread. That was one onion loaf, a bunch of poppy seed rolls, exploding cheese bread, cinnamon rolls, english muffin thingies, and bagels. I could NOT pass that up for $2.00. I hate to admit we're going to Lander again this evening and I'll probably check their discount shelf again.

Exercised this morning. It's nice to realize that doing 3 sets of 24 reps is a good step up from one set of 10.

Doing better on drinking 8 - 10 cups of water a day.

We're switching up the walking routine a little. Every other day we tackle a hill. Off days we go for distance.

I can't wait to get a break from sewing and homework so we can go swimming again!

My breakfasts this week have been scrambled eggs with cheese. Lunches have been salad, cheese, cucumbers, strawberries, and salad dressing. Yesterday hard boiled eggs were added, today hot wings!
Dinner yesterday was a bag of popcorn because I had late class. Tonight I have a meeting to attend so I'm not sure what I'll fit in there. Think I'll have a bag of popcorn right now.

Mother's day was SO NICE! I was busy and skipped breakfast, but made up for it at the Pizza Hut buffet. Started with a salad and chicken alfredo, then off to the pizza races. Actually I didn't eat as much as I could have, instead savoring every bite. The boneless buffalo wings were GREAT!!

Did a lot of yard work on Mother's day to make up for it. Then slaved at the sewing machine for a few hours and got a sore back. I stretched it out a lot this morning and it feels much better.

Things are going well. I just need to keep at it. I get about 3 days of walking in a week. And about 2 days of exercises. I feel better, it's just hard not to eat more in the evening when I'm all stressed out and doing homework.

I think once I'm done with all that and the craziness of the end of the school year is over, then hopefully I can devote more time to walking and lose some poundage.

It's hard to keep up with posting. We are SO busy!!

But weekends are nice. We went up to Sinks Canyon over the weekend and walked on a trail. My bfren is rehabbing his leg after breaking it, so we're getting out more and more.

We also went swimming at Thermop and it was SO NICE!!! We're going to try to go again next weekend during the 3 on 3. I swam some laps on the inside pool and got a GOOD workout. And I think I lost a couple pounds in the sauna.

If I plan ahead I can order some good stuff at fast foods and not go overboard. I had a double burger with no bun and a salad. But on the way home I had to try the new Hazelnut Moolatte, which I'm glad to say I didn't like. Drank it anyway to keep me awake, but I don't think I'll get another.

Wednesday:

I've been doing good. Walked 4 times last week and am increasing it every day. Yesterday I blew my diet after doing great for 4 days. I let myself get hungry and then go to China Buffet. Big mistake. Even though I ate lots of steamed veggies and sauted 'shrooms, the sweet and sour chicken was too good to pass up.

Oh well, today is another day.

Just got back from 2 days in Casper and I swear it was a challenge!!

The workshop had drinks and food, but NOT DIET FRIENDLY at all. They kept running out of the tiny water bottles they had out and had no diet pop. Everything they served was carbage! So I had to run to Hardee's and get a double burger.

Dinner was great. We ate at Outback and it's hard to go wrong there. I always have the steak kabobs and don't eat the rice. I LOVE grilled veggies and will have to have this more often. And a side of King Crab was my dessert.

Breakfast was an IHOP omelet even though I heard they add pancake batter. For lunch I got shrimp fajitas from a REAL Mexican restaurant. Usually I just leave the tortillas in the warmer, but these were HOMEMADE corn tortilals which I never had before and so DEELISHISH!!!!

I'm glad to say I got a slight workout from running through the aisles at Sam's, WalMart, Hobby Lobby and Albertson's.

I am SO TIRED. Losing that hour really hurt.

And I'm still doing good, breakfast lunch and most of dinner. Last night I made Beef No Mein and faux Chicken fried rice (cauliflower). But then the pot stickers were my downfall.

Skipping breakfast probably didn't help my tiredness any either. The taco salad was good at lunch. There just wasn't enough of it.

I need a big cup of Chai Tea!

Well, I'm glad to say that I walked Saturday AND Sunday and raked the yard both days as well for an hour or two. My shoulders don't feel like they got a workout, just got a blister on my hand.

My diet has been better. Yesterday and today I had 3 hard boiled eggs for breakfast. And Chai Tea with half & half and Splenda.

Lunches at school are salad and salad bar items.

Last night I had shrimp stir fry and then celery with cheese dip. I was doing great until I broke out the tortilla chips. I only ate one serving though, with the cheese dip.

Tonight we're having beef no mein and chicken fried rice with no rice just shredded cauliflower. You honestly can't tell the difference.

I bought ice cream and pie for dessert yesterday for everyone else. I bought chocolate ice cream and cherry pie. I don't like either one (why I bought it) so I think I'll be fine and everyone else will be happy too.

I want to walk again tonight and get some exercises in while I cook. When I'm walking I really feel the urge to start running, so I want to build up a little so I don't get shin splints. They tend to lay me up for DAYS!!

I'm renewing my vows, I mean my goals and hope to achieve them by the deadline.
